Tomato, onion, pepper and mayo sandwich

If there is one thing we never have enough of while working from home, it is time! When lunchtime rolls around, I am in need of something quick I can whip up. These delicious savory sandwiches are exactly what I was looking for. The sandwiches are filled with delicious veggies, a layer of creamy mayo and toasted to perfection. I loved every bite of my lunch today, which was even more special as it was delivered to me in the basement as I participated in a video session. The next time you are looking for something quick and simple to get you through your workday, make these tomato, onion mayo sandwiches!



Ingredients


  • Two slices whole wheat bread

  • One onion sliced in rings

  • One tomato sliced in circles

  • Mayonnaise

  • One diced green bell pepper

  • Pepper jack cheese

  • A sprinkle of garlic, lal mirch and black pepper

Directions


  1. Spread mayo on both slices of bread. Layer a slice of cheese on top of the mayo. Layer a couple slices of onion, tomato and a spoon of the diced bell pepper. Top with another slice of pepper jack cheese. Lightly toast sandwich in toaster oven until cheese is melted and bread is golden. Cut diagonally. Serve with a side of jalapeno chips or side salad. Voila! Enjoy your lunch that was ready in no time!
