California wrap

Lunch time can be a challenge when you are short for time. And if you are traveling and have as busy a schedule as we do, it always helps to have a simple, fresh meal that you can easily make in your back pocket. This fresh, light and crunch California wrap was the result of some creativity with leftover ingredients I had in my fridge. The result was fantastic! The wrap is filled with lettuce, tomatoes, cheese, kidney beans and homemade guacamole all wrapped into one delicious burrito. This meal was definitely a win win! Ingredients


  • One large tortilla

  • Chopped lettuce

  • One diced tomato

  • Handful shredded cheddar cheese

  • Kidney beans

  • Fresh guacamole

Directions:


  1. Prepare fresh guacamole. Set aside.

  2. Prepare lettuce filling. Combine chopped lettuce, tomato, rinsed and drained beans and cheese in a large bowl. Set aside.

  3. Spread one side of the tortilla with guacamole

  4. Add in lettuce, tomato, cheese and bean mixture. Wrap burrito. If desired, lightly toast the entire mixture. Enjoy!
